Butter contributes significant attributes to a food systems appearance, flavour, texture, colour and structure. Lactalis’ Butter, made from 100% fresh dairy cream, is suitable in a wide range of applications including bakery products, confectionery products, sauces and frozen desserts.
In addition to standard 80% fat (M.F.) butter (salted and unsalted), Lactalis also manufactures 82% fat unsalted butter, typically used in bakery applications for delicate pastries or laminated doughs.
Our Normandy butters are European cultured style, with a distinct cultured flavour. Available as salted or unsalted, these butters are most often applied in bakery products such as delicate pastries or laminated doughs, but have the capacity to enhance flavour in any upscale food product.
We also offer Organic Unsalted Butter 82% M.F. manufactured to meet Canada and US organic certifications and Non-GMO Project Verified certification.
Anhydrous Milk Fat (AMF), Butteroil, or Clarified Butter are almost eniterly milk fat. These products are considered lactose free as per Canadian regulations, and are most often applied in the production of chocolate, confectionary fillings, dips & sauces, Ghee, and popcorn. Available in multiple formats including totes.
