Prestige® 101 for Ice Cream and Prepared Foods – is a blend of fresh dairy ingredients formulated to replace skim milk powder/solids in ice creams and other similar frozen dessert applications. The substitution rate of skim milk powder/solids is dependent upon the end application. Prestige ® 101 is uniquely processed to enhance the stabilizing properties of natural dairy proteins. Utilizing modern advances in milk fractionation technology, it is possible to design and deliver pre-blends that perform like skim milk solids in economy and premium ice cream applications, but at substantial cost savings. This product also has application in dairy beverages, spreads, confectionary coatings and fillings, dry mixes, sauces, gravies, soups, snack foods, prepared foods, and numerous other food applications
Prestige® 115 for Ice Cream and Beverage – is a blend of fresh dairy ingredients formulated to replace skim milk powder/solids in ice cream, soft serve mix and other similar frozen dessert applications. Prestige 115 brings a clean dairy flavour profile that lends itself to replace skim milk powder/solids in liquid ready to eat beverages and dry beverage mixes. The substitution rate of skim milk powder/solids is dependent upon the end application and delivers a substantial cost savings.
Prestige® 275 for Bakery – is a functional blend of dairy ingredients designed as a milk replacer for baking. This product imparts a clean dairy note to bakery formulations; while promoting desirable textures, volumes, structures, and crumb strength, typically replacing High Heat skim milk powder. Functional and economic benefits over skim milk and/or buttermilk powder are attributes as a bakery milk replacer. Prestige 275 is also highly functional to replace skim milk powder in caramel candy and sauces.
Prestige® 315 is a premium functional dairy ingredient formulated for use in ice cream and frozen dessert, cultured products, and beverage mixes. When used as the single source of dairy-solids-nonfat, Prestige® 315 contributes to rich creamy flavour, opacity, smooth textures, and a clean ingredient declaration when replacing complex ingredients such as coffee creamers in dry beverage mixes
Protelac® 190 for Bakery & Snack & Convenience – is a spray-dried dairy ingredient formulated to fully replace nonfat dry milk in a variety of prepared foods including granola, cereal bars, pancake and waffle mixes, spreads, fillings and frozen desserts. Protelac® 195LD Low density for Beverages – is a spray dried self-foaming dairy ingredient designed as an alternative to skim milk in powdered hot beverages. Protelac® 200 for Sauces – is a special process ingredient designed to replace skim milk powder in economy and premium rich, creamy sauces, gravies, and select soup applications. Protelac® 280 is a universal dairy ingredeint, optimally designed with specific functional and organoleptic attributes that make it a staple in various food applications. Protelac® 400 is a spray-dried, skim milk product manufactured from fresh skim milk solids and milk/dairy permeate solids. This product is processed at a lower temperature to minimize whey denaturation. In doing so, the nutritional and functional properties of the protein are preserved, and a powder with a clean milk-flavour profile is produced. Protelac® 400 has applications in frozen desserts, beverages, caramels, toffees, sweet sauces, confectionery compound coatings and fillings, icings, toppings, various baked goods, sauces, gravies, puddings, cereals, soups, meat binders and dry mixes
Protelac® 450 consists primarily of skim milk solids, and formulated with the addition of other dairy solids in small quantities. This tailored recipe aims to deliver a product that offers the key functional attributes of low temperature processed skim milk powder, and the convenience that comes with cold-water soluble agglomerated (instantized) products. With limitless possibilities, Protelac® 450 is used primarily in hot and cold beverage recipes, dry mixes, and vending machine applications.
