Whey and Whey Replacers
Whey powder and whey replacers provide and enhance a dairy flavour profile in beverages, ice cream, seasoning blends, margarine, and confecitonary products. In baked goods, these ingredients promote browning, while preserving the quality, freshness, and texture of the product. Whey powder and whey replacers may serve as a partial or complete replacement for skim milk powder.
Key physical attributes of these powders are Lactalis Canada’s processing capability that produces a low hygroscopic whey particle which keeps the powders free flowing and non–caking. These powders have a particle size that enables quick reconstitution for wet mixes and good bulk density for dry mixes.
- Whey powder is the spray-dried form of sweet dairy whey made from cheese manufacturing. This versatile and cost-effective dairy ingredient is used in a wide cross-section of food manufacturing.
- Whey replacers are lower protein blends of de-proteinized whey (whey permeate), whey and/or milk proteins formulated to substitute for whey powder in situations of cost or availability constraints. In certain applications, whey replacers may provide a desirable reduced flavour contribution.
- Protelac® 175 is a specially formulated blend of pure dairy ingredients having a characteristic sweet dairy flavour. Protelac® 175 has application in a variety of bakery products, confectionary products, snack foods, seasonings, margarine, frozen desserts, eggnog, and dry beverage mixes where whey and/or lactose are used in the formulation.
- Protelac® 100 is a dairy based milk replacer that is formulated by blending pure dairy ingredients to create an excellent whey alternative. It is used in a variety of food applications including confectionary compound chocolate coatings and fillings, dry beverage mixes, snack foods, seasonings, and ready-to-eat dairy beverages.
- Darisweet® 200 is a cream-coloured, free-flowing, spray dried dairy product that provides a concentrated source of lactose and dairy minerals, making this product particularly suited to applications that require lactose in a semi-pure form. Darisweet® 200 is one of the dried products resulting from the ultrafiltration of fresh milk and/or sweet whey into protein concentrates and serum. This product has applications as a lactose replacer, a bulking agent, and as a source of dairy solids nonfat and milk mineral salts for use in bakery products (cookies, breads, dough, fillings, icings, toppings, and syrups), dry beverage mixes, seasonings, snack foods, spreads, margarine, a wide array of dairy products (frozen, fluid, and cultured), and prepared foods.
